Full-time 30-50 hrs/week, including Saturday, Sunday, holidays and festivals. Experience required.
PURPOSE OF JOB: Responsible for all food prepared in the kitchen to ensure proper portioning and consistent excellent quality. Monitor and adhere to Serve Safe, Food Code/HACCP and Ox Yoke standards and regulations.
PRIMARY DUTIES:
- Prepare and/or monitor food prepared and served relative to food safety, quality, adherence to recipes, portion control, proper plating, garnishing, appearance, and proper degree of doneness and temperature.
- Prepare breading, sauces, and garnishes.
- Food Temperature Log - takes and/or monitors the completion of the daily log.
- Supervise kitchen-staffing level and adjust accordingly.
- Monitor inventory levels of goods in the kitchen and restocks as needed.
- Supervise kitchen and food preparation staff to ensure satisfactory completion of assigned duties.
- Supervise and assist with proper portion and waste control.
- Supervise and assist with cleaning and sanitation of all back of the house areas.
- Supervise and assist with equipment, cleaning, and maintenance.
- Assist with planning menus, specials, food production, and research and development of new menu offerings.
- Assist with training staff in safe operating procedures for all equipment, utensils, and machinery.
