Ravenwood Specialty Care is hiring for an Assistant Dietary Manager / Cook

Hours are 12pm-8pm


PURPOSE OF THIS POSITION

Under the general supervision of the Dietary Services Manager , the Assistant Dietary Services Manager position assists with the responsibility for residents receiving the highest quality nutrition and food service available within economic constraints, consistent with requirements identified on individual care plans and with applicable laws, regulations, and professional guidelines. The Assistant Dietary Services Manager may assist in planning, developing, directing and controlling the activities of the Dietary Department. Functions with direction from the Dietary Services Manager, and within constraints of established policy and procedure, consistent with accepted nutritional, dietary, and food service standards of practice.

QUALIFICATIONS

Education/Certification/License

  • Documented completion of State-approved Food Services Supervisor Course.
  • High school diploma or equivalent.
  • Certified Food Protection Manager
  • ServSafe® Certification preferred
    p. Must be willing to complete the following during new hire orientation:
  • Food, Safety, and Sanitation Study Courses
  • Modified Diet Training

Knowledge

  • Knowledge of institutional food service industry.

Experience

  • Demonstrated institutional food service management skills.

Skills/Abilities

  • Functional Literacy in written and spoken English.
  • Management and supervisory skills.
  • Proficient interpersonal relationships and communication skills.
  • Ability to follow written and oral instructions.
  • Complete assignments timely, completely and accurately.

ESSENTIAL FUNCTIONS

FOOD SERVICE

  1. Assist with the implementation of procedure/instruction manual specific to department; assist in assuring correct procedures are implemented in preparation and serving of food and result in correct quantity, quality, temperature, and appearance of food served.
  2. Assist Dietary Services Manager with implementation of menus, adjusting/substituting only within parameters allowed by dietitian, regulations, standards of practice.
  3. Assist with maintenance of records, receipts and budgets regarding dietary operations.
  4. Participate in interdisciplinary care plan conferences as requested or required.
  5. Document the dietary component of residents’ care plans as requested.
  6. Assist in implementing the dietary component of residents’ assessments and care plans.
  7. Assist with monitoring the Dietary Department compliance with regulations governing long-term care.
  8. Assist Dietary Manager with concerns about food services from residents/families in accordance with positive customer relations principles.
  9. Assist with the maintenance of a perpetual food/supplies inventory, immediately correcting discrepancies or shortages.
  10. Maintain menus for required retention period.
  11. Assure adequate policies and procedures are in place to manage emergency situations or “systems breakdowns” with minimal negative impact on food service to residents.
  12. Perform any food service task necessary to provision of meals according to schedule and standards of practice; “cover” for absent staff if unable to find a replacement.

HUMAN RESOURCE MANAGEMENT

  1. Assist with evaluating needs and recommend to the Dietary Manager the number and level of dietary personnel to be employed.
  2. Assist Dietary Manager with recruiting, training, assigning, disciplining, of dietary staff in accordance with laws, regulations, and company employee relations policy and procedure.
  3. Monitor deployment of dietary personnel; assist Dietary Manager with schedules adjust as needed to provide adequate staff levels on duty.
  4. Communicate daily with dietary personnel at all levels, providing clear, concise information and feedback as well as specific assignments; assist with coordinating and implementing dietary policies and procedures.
  5. Assist with new employee orientation and on-job training, and compliance with federal and state training requirements, i.e., OSHA and OBRA.
  6. Assure implementation of effective educational programs for dietary personnel in accordance with applicable regulations, professional standards, and company policy; assure adequate new employee orientation and on-job training, and compliance with federal and state training requirements, i.e., OSHA and OBRA.
  7. Implement effective employee relations as a tool for increasing retention/decreasing turnover.
  8. Monitor staff performance of duties, adherence to policy and procedure, and compliance with occupational safety procedures; investigate incidents/injuries and non-compliance; take corrective action as needed.

MATERIAL RESOURCE / FISCAL MANAGEMENT

  1. Assist Dietary Services Manager in planning the dietary department budget; assist with operating department within the budget and spending plan established.
  2. Assess equipment, supply, and space needs and make recommendations to Dietary Manager.
  3. Assist with allocation of and guidelines for efficient economical utilization of dietary department equipment, supplies, space.

GENERAL FUNCTIONS

  1. Be responsible for assisting residents to and from activities of their choice and to modify schedules, meal times, therapies, etc. to maximize involvement in activities.
  2. Observe and abide by all HIPAA rules and regulations to ensure that personal health information is protected during its collection, use, disclosure, storage and destruction within Care Initiatives; and to ensure only the minimum necessary information is known to function in this position.
  3. Follow oral and written instructions.
  4. Observe all facility safety policies and procedures.
  5. Be responsible for the safety of residents under his/her dietary supervision.
  6. Accept assigned duties in a cooperative manner.
  7. Assume accountability for data contained in the employees’ handbook.
  8. Perform all duties assigned in an effective, timely and professional manner.
  9. Observe infection control procedures.
  10. Follow Residents’ Rights policies at all times.
  11. Assume Quality Assurance duties as assigned.
  12. Perform other related duties as directed by the Administrator.
  13. Come to work in neat, clean attire and consistently present an appropriate professional appearance.
  14. Come to work as scheduled and consistently demonstrate dependability and punctuality.
  15. Consistently work cooperatively with residents, residents’ representatives, facility staff, physicians, consultants and ancillary service providers.
