Sous Chef- Diner

Position Summary: Briefly describe the job's primary purpose or contribution to the department or organization.
This position is the number two management position for Diner culinary team members. The position will be directly and /or indirectly responsible for food production the Diner, as well as menu development, cost controls and personel supervision of all reporting positions. This position requires food production experience for large, medium and small groups including plated fuctions, Buffet functions, room service etc and all other Diner style services. This postion requires scheduling flexability with varing shifts (swing, days and middle shifts) as directed by the Food and Beverage Director, Executive Chef, Chef de Cuisne or as business dictates.
Essential Duties and Responsibilities:

•Must have good culinary knowledge, including multi outlet experience
•Must have good culinary experience in high volume diner or related F&B areas.
•Responsible for the culinary food production.
•Responsible for preliminary menu development
•Responsible for assisting in developing a food program that meets designated food cost goals.
•Responsible for assisting in scheduling culinary staff members and meeting designated payroll costs.
•Responsible for setting food product specifications for the diner
•Responsible for meeting health Department guidlines
•Responsible for meeting all company guidelines including but not limited to safetyand employees relations(HR)
•Responsible for assisting in all diner food production
• Responsible for ensuring that we have a quality food product meeting guest and employer expectations
Job Specific Knowledge

Typically requires an Associate's degree (A. A.) or equivalent from two-year college or technical school; or two years related experience and/or training; or equivalent combination of education and experience.
Seasoned: Extensive knowledge and skill gained through broad experiences in a field (or fields) which requires a command of involved, diverse practices and precedents and theory and principles. Typically requires a Bachelor's degree (B. A.) from four-year college or university; or minimum of four years related experience and/or training; or equivalent combination of education and experience.
Mastery: Mastery of theories, principles, and complex techniques or the diverse, cumulative equivalent gained through broad seasoning and/or special development. Typically requires a Master's degree (M. A.) or equivalent; minimum of ten years related experience and/or training; or equivalent combination of education and experience.
